making my kind of salsa...and other ramblings

salsa is such a cool thing to make...because it's really left up to one's imagination
or what's in the fridge. I was craving a bit of a snack, when I got home
and this is what, I came up with...very tasty.

small onion...handful of cherry tomatoes...parsley....kale...a lemon...turmeric and salt

chop parsley and kale...dice onions...and slice tomatoes
combine all ingredients in a bowl or container...squeeze fresh
lemon...add turmeric and salt

end result a nice healthy...yummy salsa to eat with crackers,
instead of chips and slices of cheese and if you choose
a nice glass of red wine...Ravens wood is a favorite.

for dinner...I made fish...white corn...asparagus (local farmers market) and
a cold vinegar macaroni salad.
simple...easy dinner to make and oh so delicious...you should try it.

And what would a day be without creating something fun.

well...hope everyone is having a fun filled day...full of good eats
and new creations.
peace and love....kelly

where i gather my food

spent the day with my daughter, gathering food at the farmers market, at our local college. I'm always so excited about what the gardeners bring : such a cool selection of veges and fruit. We're blessed here, in maui...food can be grown all year long...upcountry. The climate is cool...for winter type crops and sunny for those luscious tomatoes. I'm so pleased with what I came home with. Then it was off to whole foods, for grains, legumes, fresh almond butter and apple juice...my daughter's favorite (the one in the large glass jug)

local apple bananas...starfruit...tomatoes...a Filipino vegetable that tastes so good in a stir fry and asparagus

kale...celery...papaya...eggplant...lemons...beets

this weeks menu: quinoa and grilled veges...lentil and vege tacos...harvest soup: kale, beets and potatoes...mixed chopped salad: kale, beet greens, parsley, basil w/tomatoes and carrots
and for dessert........fruit salad and mint

here's what's for lunch............................................................yummmmmmmmmmmmmmmm!

and dinner
